Chocolate Peanut Butter Stuffed Dates
Chocolate and peanut butter is a combination that has yet to fail me, and this recipe is no exception. Taking only about 15 minutes, these quick bites are in my weekly rotation. They take minimal effort and make for the best snack on the go or dessert! I love to use 100% cacao dark chocolate to get allll the benefits (heart health, antioxidant rich, great source of minerals, just to name a few!) and minimize added sugar. The dates are so sweet you won’t even miss it!
- 10 dates (preferably pitted)
- 1/2 dark chocolate bar
- 2 tsp coconut oil
- 1/3 cup peanut butter
- sea salt
Remove pits from dates (if not already pitted)
Slice open dates and fill with peanut butter.
Break up chocolate bar and microwave in a bowl with coconut oil for about 30 seconds. Stir and repeat as needed until chocolate is fully melted.
Dip dates into the chocolate and put in freezer for 10 minutes. Repeat this one more time for a thicker chocolate layer.
Top with flakey sea salt and store in the fridge for up to one week (if they last that long!).
