Chunky Monkey Oat Cookies

Is there anything better than chocolate, peanut butter and banana? I didn’t think so. These cookies are the best for breakfast, a snack, or dessert! With simple ingredients and no added sugars, they are the best snack to keep my blood sugar balanced while satisfying the sweet tooth. I pretty much always have a batch of these on hand! Best served warm with extra peanut butter.

Ingredients
  

  • 3 very ripe bananas
  • 1.5 cups rolled oats
  • 2 tbsp hemp seeds
  • 1/4 cup peanut butter
  • 1/4 cup chocolate chips
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • Dash sea salt

Instructions
 

  • Preheat oven to 350.
  • Mash the bananas well and mix in a bowl with the remaining ingredients.
  • Roll into balls or scoop out with an ice cream scoop on a baking sheet lined with parchment paper- makes about 10 cookies.
  • Bake for about 10-12 minutes. Enjoy!
