Chunky Monkey Oat Cookies
Is there anything better than chocolate, peanut butter and banana? I didn’t think so. These cookies are the best for breakfast, a snack, or dessert! With simple ingredients and no added sugars, they are the best snack to keep my blood sugar balanced while satisfying the sweet tooth. I pretty much always have a batch of these on hand! Best served warm with extra peanut butter.
- 3 very ripe bananas
- 1.5 cups rolled oats
- 2 tbsp hemp seeds
- 1/4 cup peanut butter
- 1/4 cup chocolate chips
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- Dash sea salt
Preheat oven to 350.
Mash the bananas well and mix in a bowl with the remaining ingredients.
Roll into balls or scoop out with an ice cream scoop on a baking sheet lined with parchment paper- makes about 10 cookies.
Bake for about 10-12 minutes. Enjoy!
