Delicata Squash Fries
A fall staple! While I have yet to meet a squash I haven’t liked, delicate takes the cake for me year after year. Naturally sweet and loaded with fiber, vitamin A, potassium and more, they are an autumn no-brainer. I love getting a few of these at my local farmers market every week- they get put to good use without fail every time! These are a great addition to salads and bowls, but also can be enjoyed plain or with dip as a snack.
- 1-2 medium delicate squash
- 1-2 tbsp oil
Preheat oven to 420.
Slice the squash vertically and scoop out the inside. (tip: save the seeds for roasting later!)
Slice into pieces around ¼ inch thick.
Toss with oil and seasonings.
Line a baking sheet with parchment paper and spread fries out evenly.
Bake for about 25 minutes, or until desired consistency. Flip halfway through.
Enjoy! Savory fries pair well with cheese- kite hill chive cream cheese is my favorite, and sweet fries pair well with nut butter and yogurt.
- Savory fries: avocado oil
- Sweet fries: coconut oil
- 1-2 Tbsp seasonings:
- Savory fries: salt, pepper, garlic powder, onion powder, everything seasoning, etc
- Sweet fries: cinnamon, nutmeg
