Peanut Butter Cookie Dough Balls
Your new favorite no bake, no blend snack! Close your eyes and you’d truly think you were eating a chocolate peanut butter cookie or cup. Another plastic free recipe to add to the list. These are a great balance of healthy fats, protein, and fiber to balance your blood sugar between meals or in a pinch. The best for something sweet on the go!
- 1/2 cup almond flour
- 3/4 cup peanut butter
- 3 tbsp chia seeds
- 3 tbsp flax meal
- 2 tbsp maple syrup
- 1/4 cup tigernut flour (or could sub oat flour)
- 2 tbsp almond milk
- 3 scoops collagen powder
- 1/3 cup chocolate chips
Combine all ingredients in a large bowl.
Roll into balls with cookie scoop, ice cream scooper, or your hands.
Store in an airtight container in the fridge for 1 week.
