Pumpkin Perfect Bars
Another seasonal fav! Personally, I love perfect bars, but I just can’t get behind the price tag and the packaging. You all know that I like to minimize my single use plastic use and this is a perfect (no pun intended, I swear) way to enjoy a fun seasonal snack while saving money and helping the earth. Enjoy!
- 1 cup oat flour
- 1 cup almond flour
- 1/2 cup peanut butter
- 1/2 cup pumpkin puree
- 1/4 cup honey
- 1 tbsp pumpkin pie spice
- 3 scoops collagen
Mix wet ingredients in a small bowl and dry ingredients in a large bowl.
Combine wet and dry ingredients and mix thoroughly.
Mold into bars (I used this granola bar mold!) or flatten in a 9×9 baking pan. Freeze for 1 hour and cut bars if needed. Store in the fridge in an airtight container for 1 week.
