Pumpkin Spice Bites
You can pretty much find me with some sort of homemade bites or energy balls at any time of year, but you already know we’re gonna make it seasonal! Homemade bites are probably my favorite way to reduce my waste. Have you ever thought about the fact that every single wrapper for every single granola or protein bar you’ve ever had still exists? It could be in a landfill, in the ocean, in a sewer… truly anywhere. Pretty insane to think about, right? These bites are the best zero waste afternoon snack!
- 1.5 cup oats
- 3 dates
- 3/4 cup pumpkin
- 3 tbsp hemp seeds
- 3 tbsp chia seeds
- 1/3 cup almond butter
- 1 tbsp milk of choice
- 1.5 tbsp pumpkin pie spice
Soak the dates in hot or warm water for 10 minutes. Remove the pits if needed.
Add all of the ingredients to a food processor and pulse until well combined.
Roll into balls- if they are too sticky to roll then slowly add more milk or water- very carefully- don’t overdo it!
Store in an airtight container in the fridge for up to 1 week.
