Apple Pie Protein Oats

Apple pie for breakfast?? Say no more. This bowl brings me right back to my mom’s apple pie, but make it super nutritious and blood sugar balancing. Just like my Pumpkin Pie Protein Oats, this bowl includes my fav secret ingredient: cauliflower rice. This adds bulk to the meal  without overloading the carbs, while also adding fiber and a full serving of veg. Loaded with hemp seeds, flax meal, almond butter, apple, and collagen, this meal checks off my all boxes- carb + fat + protein + color. Enjoy for breakfast and stay full and fueled until lunch!

Ingredients
  

  • 1 small apple
  • 1/3 cup oats
  • 1/3 cup frozen cauliflower rice
  • 2/3 cup unsweetened vanilla almond milk
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tbsp coconut oil or butter
  • 1 tbsp flax meal
  • 1 tbsp hemp seeds
  • 1 tbsp almond butter
  • 2 scoops collagen

Instructions
 

  • Dice apple and saute on stovetop with coconut oil and a dash of cinnamon and nutmeg.
  • Saute apples until soft.
  • Heat oats, milk, and flax meal in a pot on the stovetop. Stir in cauliflower rice, collagen, flax meal, and spices. Cook on low for about 8 minutes, stirring occasionally.
  • Top with apples, almond butter, and hemp seeds.

Notes

Optional: additional cinnamon, honey, or maple syrup.
