Pumpkin Pie Protein Oats

A fall breakfast staple! These oats are basically pumpkin pie in a bowl. This recipe has a secret ingredient that you’d never guess….. cauliflower rice! Before you click away, hear me out. Adding the cauliflower is an insanely easy to get veggies in at breakfast, adds fiber and increases the nutrient density of the meal. Also, it adds volume to the bowl without make it too heavy. Sold yet? Don’t knock it ‘til you try it!  This bowl is as fall as it gets. Enjoy!


  • 1/3 cup oats
  • 2/3 cup vanilla unsweetened almond milk
  • 1/3 cup cauliflower rice
  • 1/3 cup pumpkin puree
  • 1 tbsp chia seeds
  • 1 tbsp flax meal
  • 2 scoops collagen
  • 1 tsp pumpkin spice


  • Combine ingredients in a bowl and mix thoroughly. I like to start with the pumpkin and oats to be able to mix the pumpkin well!
  • Microwave for about 2.5 minutes, stirring at the minute marks. Can also prepare this on the stovetop in a pot!
  • Top with your toppings of choice and enjoy!


Optional toppings: nut butter (I used maple almond butter from RX), hemp seeds, pumpkin butter
